In Greece, thyme honey accounts for approximately 10% of the country’s total honey production. The honey from Kos stands out for its pure taste and consistently high quality.
Characteristics
Taste:
Pleasant and intense, with a full-bodied profile. Due to its high fructose content, it may occasionally leave a slight burning sensation in the mouth.
Aroma:
Strong and distinctive, thanks to the essential oils of thyme. It becomes immediately noticeable upon opening the jar.
Color:
Light amber. The thyme honey from Kos features a color that lies between the bright hues of Cycladic honey and the deeper orange tones of Cretan honey.
Crystallization:
Naturally crystallizes within 6 to 18 months, depending on storage conditions.
